Everyday Salad...

I thought I would share what I had for dinner last night and the night before.  Mediterranean Salad!  I have been making this salad for sometime now and usually make it every Sunday for the week ahead.  Something fresh and healthy to eat on during the week.  Yesterday, I took my Dad some for the first time and he loved it. He said "can you bring me that salad everyday?" :) So, let me share with you all.  I think I have perfected it and it is just right!


The Recipe

Spring Mix lettuce
Roma tomatoes
Red Onion (sliced)
Greek marinated mixed olives(pitted)-kalamata, green, and black
Armenian feta cheese w/ herbs
Flat-leaf parsley (Italian parsley)
Ground black pepper
Chili powder

Just mix all the ingredients together adding as much or as little as you want of each. I get the olives and feta cheese at Jon's International market in the deli section. I am sure you can find it in your local international market or just use regular herbed feta. The Armenian feta is really creamy and melts in your mouth. Yum! 


Note:  My husband wanted me to share with you all that he likes it with dried cranberries, but only the ones form Jon's International market. lol!!!
