Summer Salads...

I have been a salad making woman over here!  Summer salads are the best and what better time to eat them than while listening to some jazz.  As you all know, I was at the Playboy Jazz Fest last weekend and I whipped this salad up along with a Corn Succotash and some Blueberry Crumble Bars.  Yes, it was so good and everyone enjoyed!

My adjustments 
-added Savoy cabbage
-left out the sprouts (actually forgot to get them at the store)
-added wonton strips(use Wonton Wrappers-available at any grocery store, cut in strips, and fry)
-didn't make the dressing(just did not have time), but used Soy Vay Toasted Sesame dressing. This dressing is soooo good and friendly on the carb and fat side. 


Napa Cabbage has a similar texture to lettuce.
There isn't an ounce of lettuce in this recipe

Bright green Sugar Snap Peas and chicken breast

Napa cabbage, Savoy cabbage, red cabbage, carrots, red and yellow peppers,
cilantro, scallions, and chicken

This corn is slammin'!!! lol! You can eat it hot or cold. 
Note: I used basil which added a very fresh taste.
